Chocolate Pancakes with Bananas

Ingredients:

For the pancakes:
2 tablespoons of cocoa
1/2 teaspoon of vanilla
2 eggs
85 g flour
30 g butter, melted and cooled
1 tablespoon of coffee liqueur
4.3 cups of milk

For the filling:
170g mascarpone
1/3 cup of powdered sugar
120ml whipping cream
3 tablespoons of cocoa
1 teaspoon of vanilla
1 tablespoon of coffee liqueur
pinch of salt
3-4 big banana
Additional powdered sugar for dusting

Preparation:
Mix cocoa, eggs, vanilla and coffee liqueur in a large bowl until smooth. Stir in the flour and add the butter and stir again to avoid lumps.

In a large saucepan, bring the milk to a boil. Mix fourth of hot milk with the egg mixture, continue to stir, and then gradually pour in the milk and the rest, but make sure that the eggs are not curled. Cool the dough for about 30 minutes.

In a medium bowl, combine the mascarpone, cream, icing sugar, cocoa, vanilla, liquor and salt and mix until smooth.

From the cooled dough fry pancakes on both sides until they get golden brown
Apply a thin layer of cream on fried pancakes, and top it with finely chopped banana pancake and twist it into a tube.

Sprinkle the top with powdered sugar.
