1.    Coffee and chocolate cup fruitcake

Coffee and chocolate cup fruitcake

3 tablespoons of flour
1 teaspoon of instant coffee (powder)
2 tablespoons of cocoa powder
2 ½ or 3 tablespoons of sugar
¼ teaspoon of leavening agent
2 tablespoons of honey
1 egg
2 tablespoons of vegetable oil
½ teaspoon of vanillin

Mix flour, ground coffee, cocoa powder, sugar, and leavening agent in a bowl. Stir thoroughly.
Add milk, eggs, oil, and vanillin. Stir everything with a fork until it turns into a homogeneous mass.
Pour the mix into a previously oiled cup, and heat it up in a microwave for approximately 90 seconds, until your fruitcake is ready. Make sure not to overdo it!
Serve with a scoop of vanilla ice cream or simply with some sugar powder on top.

Enjoy!

2.    Strawberry and vanilla fruitcake with creamy frosting

Strawberry and vanilla fruitcake with creamy frosting

1 tablespoon of softened butter
1 big egg
½ teaspoon of vanillin
2 tablespoons of sugar
¼ cup of flower
1 teaspoon of leavening agent
½ teaspoon of cinnamon
2-3 tablespoons of strawberry cut into small cubes (you can use frozen strawberries)

In a medium size bowl, mix all ingredients (except strawberries) and whip with a whisk until the dough becomes smooth and all the lumps are gone.
Add strawberries carefully.
Lubricate your cup with butter and pour the dough inside so it fills up 2/3 of the cup (to make sure it doesn’t overfill.) Better yet, split the dough into 2 cups so it only takes up half the space of each.
Place the cup in the microwave and prepare on high heat for 75-90 seconds. It’s best to watch it carefully throughout the time it’s being cooked, as, depending on what kind of microwave you have, your fruitcake might be ready in just 60 seconds, or it might need 2 full minutes to be done.
Once your fruitcake is ready, take it out of the microwave and let it cool down.

Meanwhile, you can make frosting:

1 tablespoon of melted butter
¼ cup of powdered sugar
¼ teaspoon of vanillin
1 tablespoon of cream (or milk)

Mix all ingredients (except cream) in a small bowl and whip it until desired consistency. You can reduce the thickness of your frosting by adding cream or milk. Pour the frosting on top of your fruitcake so it soaks it up. Alternatively, you can carefully take your fruitcake out of the cup (by using a knife to separate it from the walls of the cup), place it on a plate and pour frosting on top.

3.    Chocolate fruitcake with salty caramel

Chocolate fruitcake with salty caramel

4 tablespoons of flour
4 tablespoons of sugar
3 tablespoons of unsweetened cocoa powder
¼ teaspoon of leavening agent
¼ teaspoon of salt
1 egg
3 tablespoons of milk
1 tablespoon of vegetable oil
2 saltwater taffies or 2 tablespoons of salted caramel

In a small bowl, mix flour, sugar, cocoa, leavening agent, salt, egg, milk, and vegetable oil. Mix until it turns into a homogeneous mass. Pour the mix into a small cup. Add saltwater taffies or 2 tablespoons of salted caramel, and try to “drown” them in the dough.
Prepare in microwave on high heat for 90 seconds. Add another 30 seconds if needed.

You probably don’t have any saltwater taffies at hand, so here’s how to make a sophisticated dessert – salty caramel – at home:

Pour some sugar in a pan and place on low heat.
Add 1 drop of lemon juice and 3 drops of water.
The sugar will melt in a few minutes. Don’t touch or mix it!
Heat up some cream while waiting.
When the cream begins to boil, turn off the heat on your sugar and immediately add cream to the pan.
Take off heat. Stir thoroughly.
You should have a tender, creamy sauce. Add some salt (as desired). Stir, then pour in a bowl and refrigerate so it cools down.

4.    Banana cup fruitcake with crème brulee

Banana cup fruitcake with crème brulee

1 tablespoon of metled butter
1 egg (slightly whipped)
1 tablespoon of milk
1 ripe banana (made into a paste)
3 tablespoons of flour
3 tablespoons of sugar
1 teaspoon of leavening agent
a scoop of crème brulee ice cream for decoration

Place butter into a cup and melt it in microwave (10 seconds).
Add egg and milk to your melted butter. Slightly whip everything using a fork.
Add banana paste into a cup and continue to stir using a fork until you see a homogeneous mass.
Finally, add all dry ingredients to the mix and whip everything vigorously with a fork once again.
Place the cup in a microwave and prepare on medium heat for 1 minute.
Your fruitcake should raise a bit and remain liquid in the middle. Microwave it for another 10 seconds. Keep adding 10 seconds until the middle is fully cooked. Serve with a scoop of crème brulee ice cream. Enjoy!

5.    Carrot fruitcake (without eggs)

Carrot fruitcake (without eggs)

6 tablespoons of flour
2 tablespoons of sugar
¼ teaspoon of leavening agent
¼ teaspoon of salt
1/8 teaspoon of cinnamon
1/8 teaspoon of nutmeg
5 tablespoons of cooled milk and ½ tablespoon of lemon juice (mix and let stand for 10 minutes)
2 tablespoons of vegetable or olive oil
¼ teaspoon of vanillin
3 tablespoons of finely grated carrots
1 tablespoon of ground nuts
1 tablespoon of ground raisins

Get a small bowl, mix sieved flour, sugar, leavening agent, salt, and cinnamon. Stir well using a whisk or a fork.
Get another bowl and mix milk and lemon juice with butter, vanillin, and grated carrots. Stir thoroughly using a spoon.
Merge the mixes in the two bowls together, whipping everything thoroughly.
Finally, add chopped nuts and raisins.
Pour the dough into a cup so that it doesn’t take up more than 2/3 of it. Place the cup in the microwave and prepare on high heat for 2-2.5 minutes. Add another 30 seconds if needed.
Your carrot fruitcake is ready! Serve while warm, topped with honey or chocolate syrup.
